I haven’t done a recipe Sunday in a while so here we have it, the perfect tangy drink for these hot days we’re getting in England at the moment. I love blueberries and lemons so this is the perfect combo. It doesn’t just taste good, but also looks really pretty, so if you’re having guests over, whip up a jug of this! It’s also nice and tangy so if you like that kinda thing, you’ll love this, and for an extra kick you can also add some good old vodka 😉
1/2 cup white sugar
1 cup blueberries (plus some extras to add in afterwards)
3/4 cup freshly squeezed lemon juice (and a few slices)
How to make:
First you have to make blueberry syrup, which is a lot easier than it sounds, so combine the sugar and 1 cup of water in a pan on medium heat and stir until the sugar has dissolved. Then stir in the blueberries and bring to the boil, reduce the heat and simmer until all of the blueberries have broken down, which takes about 3-4 minutes.
Strain the blueberry syrup through a sieve, and then let it cool.
After it’s cooled, whisk together the blueberry syrup, the lemon juice and 5 cups of water. Pour it into a jug and put it in the fridge until it’s chilled.
Serve it with ice and throw in some blueberries and a lemon wedge to make it look pretty!
