I want to start uploading a ‘Baking Sunday’ post every two-three weeks, to add something different to my blog other than fashion & beauty posts, so to start this off, I have this little recipe to share with you. I recently bought this really cute little book full of mug cake recipes, that are really quick and easy to make, and taste delicious! Today I decided to make the Rocky Road cake recipe as I had all of the ingredients in and it was literally as simple as shoving everything in the mug, mixing it together and putting it in the microwave for two minutes, what could go wrong?! Well. There was one tiny mistake that I made, I’ll pre-warn you to use a large mug as the one I used was slightly too small and it over flowed and covered the mug in melted cake and marshmallow. Apart from that, it tasted absolutely gorgeous and it was a really simple and quick little snack to satisfy my sugar craving. The sponge underneath was really soft, and I let my sister and my brothers try it and they loved it too, so try it out!
What you’ll need:
2 tablespoons of soft butter
1 tablespoon of cocoa powder
1 medium egg
3 tablespoons of caster sugar
2 tablespoons of self-raising flour
1 pinch of salt
4 tablespoons of mini marshmallows
2 tablespoons of raisins
2 plain biscuits (ideally digestives or chocolate cookies)
How to make:
Place the butter in a mug (approx size 350ml) and place in the microwave for 10-20 seconds until it’s completely melted.
Stir in the cocoa powder until combined, then add the egg and sugar and beat the mix with a fork until combined.
Add the flour and salt, and then beat the mix again until it’s smooth. Fold through almost all of the marshmallows, raising and biscuits and then add the remaining on top.
Cook in the microwave for around 2 minutes 20 seconds for 600W, 2 minutes for 800W or 1 minutes 40 seconds for 1000W.
Leave to cool and then enjoy!
